

Galapagos Spiny Lobster
The Galapagos Spiny Lobster, because of it's pristine cold water natural habitat rich in
sea life, is generally much sweeter and more tender than it's warmwater counterparts,
and is more akin to an Australian rock lobster. As well, the Galapagos Spiny Lobster is
only harvested in larger sizes, always at least 6 oz per tail, and sometimes up to 2 pounds
per tail! This helps to ensure sustainability of the fisheries, so that these beautiful
creatures remain abundant.
Continental Spiny Lobster
The Continental Spiny Lobster, while not unique like the Galapagos lobster, is still in high
demand throughout the world. We limit sizing to at least 4 oz per tail, with the average
tail size at 6 oz, and ranging all the way up to 1 lb or more.
Quality
Quality is determined by when the lobster is caught (seasons regulated by gov't), and
how it is handled (time/temperature). Our divers catch lobsters live and send them to our
processing facility, where we put them into tanks that lower their body temperature to 2
degrees Celsius. Once their temperature has dropped, the tails are removed from the
bodies and they are sorted and packed for freezing, which takes less than 1 hour.
Exportation
While frozen raw tails are our general form of export, we are also able to export frozen:
cooked tails, whole cooked, or whole raw varietals. Finally, we are able to provide live
lobsters for special markets.
