Shrimp are generally sized by the number of shrimp needed to weigh at least one
pound.  Thus, U-10 means that there are under 10 shrimp per pound.  As well, 51-60
means that there are from 51 to 60 shrimp per pound.  Prices differ greatly depending
on the actual count per pound.  Natural Select always packs middle-count, meaning that
our 21-25 shrimp are 23 to a pound.

Uniformity
Of course, each shrimp can not be exactly the same size.  Uniformity expresses the
variance between the smallest shrimp in the lot to the largest shrimp in the lot.  
Mathematically, uniformity is expressed as the weight of the largest 5% of the lot
divided by the weight of the smallest 5% of the lot.  As such, uniformity is always a
number greater than 1.  Natural Select packs farmed shrimp with a uniformity from
1.1-1.2.

Net Drained Weight
The net drained weight of the lot must always meet or exceed the declared weight on
the package.
